Slice celery
Sprinkle inside cavity of chicken with thyme and salt add 1 tsp of butter sliced celery and onion.
Rub outside of Chicken with remaining butter
Place chicken breast-side down in roasting pan
Add enough water to cover bottom of pan
Roast 10 mins
Reduce temp to 375 F
Roast 20 mins more
Turn Chicken breast side up
Roast until golden brown ~30 mins more
