Peel carrots, then cut in quarters lengthwise. Cut each strip into 2 inch pieces. Place on a sheet pan lined with foil and toss with the zest of 1 small lemon and add salt and pepper to taste. Quarter the lemon and set aside.
Roast 20 minutes. Service with lemon slice on the side.
