Oven roasted green beans and sweet potatoes glazed with a sweet orange and cranberry sauce.
Place prepared green beans, sweet potatoes and olive oil in a large bowl and toss to coat.
Line a cookie sheet with parchment paper and turn the vegetables onto the pan. Even out into a single layer. Sprinkle with salt.
Place in a preheated 400 degree oven for 30-40 minutes until slightly brown and tender.
Meanwhile, place 2 tablespoons of the orange juice and the cornstarch in a small jar. Shake to combine. In a small saucepan combine the cornstarch mixture, the remaining orange juice, sugar and craisens. Cook over medium heat stirring often until the sauce bubbles and thickens. Lower heat to low and hold for vegetables to finish roasting.
When vegetables are done, turn out into a serving bowl and pour the sauce over the top, stirring to coat completely.
Top with sunflower seeds and serve.
