Meaty Mushrooms makes a great vegetarian sandwich
Preheat the oven to 375 degrees. Toss mushrooms, thyme, and oil. Put on a rimmed baking sheet and roast for 10 minutes, toss, then continue to roast for another 5-10 minutes until tender. A few minutes before the mushrooms are cooked, put the rolls on a separate baking sheet and heat in an over cut side up. Sprinkle the mushrooms with lemon juice and then put on the goat cheese crumbles on top allowing to melt.
Transfer the mushrooms onto the warm rolls, season generously with salt and pepper and top with red onion and greens
