This can get spicy, so start light & add spices as needed
Cube meat
Put beer in a sauce pan & brew oregano while browning meat.
Melt the suet, or heat the oil in a large pot over medium high heat. Remove unrenderd suet and add meat to pot. Cook until evenly browned. There will be a bit gravy - keep this!
Stir in ground chile, cumin, garlic, and onions. Add a small amount of water to barely cover. Bring to a boil then lower head and simmer uncovered for 30 minutes, adding water as necessary.
Stir in crushed red peppers. Strain oregano out of beer & toss oregano. Put beer in pot. Strir in paprika, vinegar, 2 cups beef broth, diced chilies, tomatoes and host pepper sauce. Simer uncovered for 45 minutes.
At this time - if you want the flavors to spread - remove from heat & when coolish - put in fridge overnight. Take out of fridge and slowly bring back to a simmer (can skip this step).
Disolve corn flour in last cup of beef broth. Stir into the pot and simmer uncovered for 30 minutes.
We usually put pinto beans, cheese, sour cream, green onions, etc - on the side. Fill a bowl with chili & mix in what you desire.
