This is a modern equivelant of a very old hungarian recipe for cheese scones.
Rub the flour, the salt, 100 g of grated cheese and the margarine together until you get a crumbly mix. Add the two eggs and the soured cream. Knead together. Roll out to a thickness of 2 cm (or an inch, which is a bit thicker) on a pre-floured pastry board. Using a knife, score a lattice pattern into the top of the rolled pastry. Using a pastry cutter (or a small drinking glass), cut circles from the dough. The small cut-off bits can be kneaded together and rolled out again to reduce waste. Sprinkle the top of the dough medallions with the remaining 50-100 g of grated cheese, and bake in an oven (190-200C) for about 15-25 minutes. Electric ovens work faster. Don't overbake. When the scones are nice and golden brown on top they are ready and can be taken out to cool out of the oven.
If you like you can sprinkle with some caraway seeds, in which case you will need to either brush some rare egg or melted butter ontop first to help them stick.

Tastes great hot or cold. If you enjoy them hot try putting them in a microwave after they have cooled down then cut in half and put a little spread of margarine on each slice. Delicious!
