1. Heat 1 teaspoon oil in a large nonstick skillet. Add corn;; saute 3 minutes or until lightly browned,. Add onion and next 3 ingredients; saute 6 minutes or until vegetables are tender. Stir in thyme, salt and pepper.
2. While vegetables cook, sprinkle fish with seasoning. heat 1 teaspoon oil in a large cast iron skillet. Add fish to pan; cook 4-5 minutes on each side or until desired degree of doneness. Serve fish over vegetable mixture.
