The healtheir alternative to the Chiese take away dish (except the salt). This version comes in at a low Cal count of 563 per portion. This receipie is one portion. Bon Apetite!
1. Cook your brown rice. I use a rice cooker so whatever way you do it do it to your standards.
2. Marinade your chicken in 30ml of sweet chilli sauce and 1/2 teaspoon of salt.
3. To a wok (or pan) add your stir fry oil, garlic, onions and peppers and soften.
4. In a pan fry your chicken and add the remaining marinade to the pan also. Cook until brown and caramalised.
5. To the wok now add the dried chilli flakes, the mushrooms, the other 1/2 tsp salt and the other 30ml sweetchilli sauce.
6. Once the mixture is cooked through add the chicken for about a minute or two. Plate up your rice then add the Salted Chili Chicken on top. Enjoy!
Dont be alarmed at the colour change when it starts to caramalise. this is perfectly normal and does add flavour. Play the chicken cooking process by eye. If your not a fan of caramalising, cook on a low heat to allow the chicken to cook through. You could add a little water to this to sofen the caramalisation process and still cook the chicken through.
If you are worried about the salt intake, then removing salt out of this equations produces just Sweet chilli chicken.
