add cornstarch to the berries.
Cook over medium heat just until mixture thickens, and cornstarch has cooked. add honey at simmer
(Some people use it cup for cup, others prefer 1/2 cup - 1/3 cup of honey per cup of white sugar. Reduce the amount of other liquids by 1/4 cup for every cup of honey used. Lower the oven temp about 25 degrees F to prevent over-browning and add 1/4 teaspoon of baking soda for each cup of honey to your batter.)
Add butter (don't forget!)
Cool before placing into pie shell (recipe to follow).
Set the oven to 425 degrees. Set the pie on the lowest rack and bake for 15 minutes. Reduce heat to 350 degrees and continue to bake 15 - 20 minutes longer.
Cool before serving.
