Cook pasta until al dente.
Start by heating olive oil over medium low heat.
Add sausage, brown until cooked.
Add minced garlic, cook until soft.
Add cubed eggplant, cook until soft.
Stir in tomato paste until incorporated, use first can of water to loosen the sauce, add more if necessary later on.
Add torn basil, campanelle pasta, parmesan cheese, toss and enjoy!
