Suggest a better description1. Allow the steak to rest at room temperature, covered, for 30 minutes before cooking.
2. Heat a saute' pan over medium heat and add the oil. Season the steaks with salt and pepper to taste on both sides. (use kosher salt). Sear in the hot pan until deeply carmelized, 3-4 minutes. Flip the steaks over and repeat. Continue to cook until the steak is done to your liking. An internal temperature of 125 and 130 is ideal for medium rare.
3. Just before the steaks come out of the pan, top each one with a coin of Herb and Roasted Garlic Butter.
4. Allow the steaks to rest for 5 minutes before serving.
