A delicious way to prepare a healthy side dish!
Remove tough ends of ribs on the kale leaves. Chop coarsely. Heat olive oil in large saucepan over medium high heat. Add garlic and cook until soft. Raise heat to high and add kale and stock; toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring, until all of the liquid has evaporated. Season to taste with salt and pepper. Drizzle with vinegar and serve immediately.
Water can be substituted for the stock with a loss of flavor.
