Prepare your table and pour your coffee. I have a strong preference for eating my eggs immediately after they are cooked, so it's important to have your table set and everything ready. Toast your bread, then spread it with goat cheese and sprinkle half of the chives on top. Set it aside. (By the way, if you choose to butter the bread before adding the goat cheese, it's totally fine.)
In a small bowl, beat the eggs with milk, salt, and pepper using a fork until well combined, with a few large bubbles. Heat a large sauté pan over medium-low heat. Once the pan is hot, add the butter. Once the butter has melted and become foamy, add the eggs and pause for a moment. You can count to 20 if necessary, but allow the eggs to start setting before you begin stirring. Using a wooden spoon or spatula, gently push the eggs from the outside towards the center of the pan and pause again. Count to 5 if needed before making another push. Repeat this process around the pan, as if you were drawing spokes of a wheel through the eggs with the spatula. Pause for 5 seconds after each push. Keep going around the pan as many times as necessary until the eggs in the center form a slightly damp, ribbon-like pile. They should appear about 75 percent cooked. Use the spoon or spatula to break up this pile into smaller chunks according to your preference. At this point, your eggs should be approximately 90 percent cooked.
