Suggest a better descriptionIn the bowl of your stand mixer, combine first 8 dry ingredients and mix gently w/dough hook till blended.
Pour off and reserve 4 ounces of Mushroom broth, pouring remainder into bowl containing dry ingredients, while mixing at slow speed using dough hook.
Continue kneeding at low speed for 15 minutes.
While waiting, Pour all remaining Broth, Water, & Shoyu into a 6 quart crock pot and turn to High.
Peel onion and slice in half, put into waiting liquid.
Peel Garlic cloves and put into waiting liquid along with Ginger Medalions. Cover.
When Kneeding for 15 minutes has completed, Turn mixer off and allow dough to rest for at least 30 minutes, but, no more than 3 hours.
Kneed a second time for 15 minutes at low speed.
Remove dough and form into an oblong loaf shape.
Press a sharp knife through the loaf to form 12 slices of roughly equal size. With lightly oiled hands, to prevent sticking, Gently from each into a burger or small steak shape between 1/2" and 3/4" thick.
With at least 1/3c Olive oil in a pan, heat till oil just begins to smoke. 3-4 at a time, quickly brown both sides of your Seitan Steaks, being careful not to burn them.
Once all have been browned, gently lower tem, one at a time into the now heated liquid filled crock pot.
Turn Crock Pot controls to low, and cook slowly covered for at least 8 hours, or, overnight. Checking contents every couple of hours and rotating as nessicary to insure even immersion and absorbtion of liquid.
Steaks will double to triple in size and weight during cooking due to absorbtion.
LEAVING CROCK POT COVERED, turn it off and allow contents to cool COVERED to near room remperature,
Package in meal size groupings in freezer safe containers, distributing any remaining liqued evenly between containers.
Seitan steaks may be stored sealed and in liquid in the fridge for up to a week, and, frozen for up to a year.
