Bold statement: best lasagne you’ve ever had.
And now that we’ve gotten that out of the way ... Many of our recipes are interchangeable and have heaps of uses, which by our definition is the sign of a good, useful cookbook. This is one of those recipes. You already have the best lasagne of all time with the bolognese and cheesy béchamel, but add our feta and pesto and you’ll blow ’em all away. We had to put a stop to serving this at the Deli because our chefs became full-time lasagne-makers and we never had anything else in the case. Exaggeration – but that’s how it felt. This is the definitive recipe to whip out when someone is suspicious of vegan food, or if you’re trying to prove a point. It will convince them. We promise.
This recipe feeds eight, but feel free to make a smaller lasagne for one or two people. Refrigerate any leftovers overnight, then you can easily slice it into portions the next day, wrap and freeze.
