Smoky and pull-apart tender. It's best made on the grill, but works just fine made in the slow cooker. Simply add 1 teaspoon liquid smoke to the BBQ sauce for that smoky flavor.
1. Combine the salt, pepper, cayenne, and oil; rub all over the four pieces of meat. Set aside while heating the grill. (Can be wrapped in plastic and refrigerated for up to 24 hours.) Also, soak 3 cups wood chips while heating the grill.
GAS GRILL: Seal chips in foil; poke vent holes in top. Place packet on hot grill, close lid and heat until very smoky. Leave only main burner on, turn off others. Place beef off of the direct burner. Cover and grill for 2 hours. No need to flip the meat or open lid.
CHARCOAL GRILL: Pile coals to one side of grill. Throw wet chips directly onto coals. Add the meat to the coal-free side. Cover and grill for 2 hours. No need to flip the meat or open lid.
2. Transfer meat to 9x13 pan. Add 1/2 cup water to the pan. Cover pan with foil and bake meat in a 300 degree oven until very tender, about 2 hours. Transfer cooked meat to a bowl, and cover with foil while making sauce. Strain the cooking liquid and skim the fat, reserving 1/2 cup of juice and 1 tablespoon of the fat.
3. Saute the onions in the reserved fat until soft, about 8 minutes. Add the garlic and chili powder and cook until fragrant, about 30 seconds. Stir in the remaining BBQ sauce ingredients and reserved meat juices and simmer until thickened, about 15 minutes.
4. Using two forks, pull the beef into shreds, discarding any excess fat or gristle. Toss meat with 1/2 cup of the BBQ sauce. Serve, passing additional sauce at the table.
