Quick recipe and the grits are actually good

1. Cook riced cauliflower in microwave. Slice green onions finely, separate into 2 piles - greener and whiter parts.
2. Sprinkle half of seasoning over raw shrimp
3. Heat large skillet over medium heat and spray with cooking spray
4. Cook shrimp 2-3 min per side. Add lemon juice and chicken broth and simmer 1 min. Sprinkle rest of Cajun spice on and then transfer shrimp and broth to separate bowl
5. Clean skillet and melt butter
6. Add cauliflower and cook 3 min
7. Add almond milk and salt and white half of green onions and cook 5 min
8. Remove pan from heat. Add sour cream and cheese and stir thoroughly
9. Serve shrimp atop grits and top with scallions, adding a couple tsp of broth for each serving
