Suggest a better descriptionSpray a heavy-duty skillet with oil. Add onion and next 4 ingredients and cook until softly done, stirring often. Transfer mixtre to a large Dutch oven; add tomatoes and next 10 ingredients. Bring to a boil; cover, reduce heat, and simmer 1 hour, stirring occasionally.
Peel and devein shrimp; add to tomato mixture, and simmer 3-6 minutes or until shrimp turns pink. Remove and discard bay leaves. Serve over Saffron Rice.
Saffron Rice Directions:
Cook rice according to directions on package. Two packages should yield 8 cups of cooked rice.
