Suggest a better descriptionCook noodles according to package instructions, just until tender. Rinse under cool water.
Mix the sauce ingredients together and set aside.
Heat 1 1/2 tablespoons of oil in a large pan or wok over medium high heat. Add the shrimp or chicken, garlic, and carrot, cooking 2-3 minutes until shrimp are cooked through. Push everything to the sides of the pan. Add a little more oil and add the beaten egg. Scramble the egg, breaking into small pieces with a spatula as it cooks. Add noodles, sauce, bean sprouts and peanuts to the pan. Toss everything to combine. Top with green onion, peanuts, cilantro and lime wedges and serve!
