Suggest a better description1. Add the ground beef and diced onion to a large skillet. Using a wooden spoon to crumble the beef, cook until the beef is browned. Drain some of the excess fat. (reserving the green onion) and add to the skillet. Stir well to coat and bring to a low simmer. Allow to simmer on low for 8-10 minutes.
2. Top with green onion and divide between 4 meal prep bowls
3. Preheat the oven to 400 F and line a baking sheet with parchment paper. Add the sweet potato, coat with avocado oil, and season. Toss to combine.
4. Bake in the preheated oven for 30-35 minutes, flipping halfway through, or until the sweet potatoes are cooked to your liking.
5. Divide the sweet potato and steamed broccoli among the meal prep bowls.
