Suggest a better descriptionThe night before you cook or at least 4 hours before beginning rub both pork chops liberally with the BBQ rub of choice( I use a combination of Meat Church Honey Hog and Voodoo). Wrap in plastic and place in fridge until ready to cook.
Also the night before, put fig jam into a sauce pot on medium heat, add 2 oz bourbon and juice of 1 lemon (possibly 2 depending on your preferences). Simmer jam to reduce and thicken. Jam should be thick enough to stay on spoon without easily running off. Place in fridge and cool completely before using.
Remove from the fridge and sprinkle with a little more seasoning.
Preheat your grill to high heat and turn on your smoker.
Once preheated, place pork chops on grill for 90 seconds, turn 180 degrees and cook for 90 seconds more. Flip the chops over and repeat on the other side.
After searing, remove from heat and cover 1 side of pork with Fig Bourbon jam. Place on smoker at either 225 or High Smoke option if your smoker has it. Allow to smoke on high smoke for 30 min and then turn up to 225. Pull pork chops at an internal temp of 135.
Allow Pork chops to rest for 10 minutes. If you have a Searzall or Culinary torch, brulee the top of the Fig jam right before serving.
