Beefy stew with potatoes, black pepper, soy sauce and vinegar
Cut and Clean Beef Fat, and Slice Beef into one inch pieces/strips
Place the Beef into a bowl and add The Vinegar, Soy Sauce, one teaspoonful of salt and one teaspoonful of pepper. Mix and let it marinade.
Peel and Dice Potatoes, do the same with carrots and set aside together.
Peel and Slice Onions/ or Dice/ and place in a small bowl. Add Mojo and mix; set aside to marinade.
Cut Tomatoes in slice and set aside; separate because this is the last thing you’ll add to POT.
Set Instant Pot to Saute setting HIGH
Pour Olive Oil and allow to heat up.
Pour Beef and all contents of that bowl inside pot and let it brown where it releases it’s natural juices. Stir to make sure each sides of beef is no longer red.
Once it begins to simmer, add Onion Marinade. Stir for about 2-3 minutes.
Add Marinara Sauce and Stir
Add Potatoes and Carrots, Stir and allow to simmer for about 2-3 mins..
Add 1 cup of beef broth
While Simmering, add more salt, pepper, or soy sauce if you’d like. I added a dash more of soy sauce and salt n pepper
Add Garlic Pepper and Dried Parsley.
Top it with tomatoes and stir.
Close with Pressure Lid, make sure vent is closed.
PRESSURE HIGH 5 MINS and NATURAL RELEASE FOR 10
Serve with white rice
