In a small bowl, cream the soft butter by beating it against the sides with a wooden spoon or fork. In another bowl, beat the eggs and yolks, stir in 1/2 c of grated cheese.
Heat large ovenproof serving bowl or casserole in 200 degree F oven.
Bring water (6 qts) and salt to bubbling boil. Drop pasta in and stir. Cook as directed.
Meanwhile, fry bacon in 8-10" skillet until crisp. Pour off 1/2 bacon fat. Stir in optional red pepper flakes and then cream. Bring to a simmer; keep warm until pasta is done.
When pasta is done, drain thoroughly, lifting strands with two forks to drain. Transfer to the heated serving bowl and stir in creamed butter, tossing and turning with 2 forks to coat each and every strand.
Then stir in the hot bacon-and-cream mixture and finally the eggs and cheese, mixing everything together thoroughly. The heat of the pasta and other ingredients should cook the raw eggs on contact.
Taste and season with salt and a few grindings of pepper.
Serve the carbonara at once with the remaining grated cheese passed at the table.
