This is one of my go to recipes when I am fumbling over dinner on a busy night! I always have these things in my pantry and it is seriously speedy and sooooo good!! I came up with this meal looking for a cheaper alternative to going out to eat (my husband loves chicken parmesan!!) My husband actually complains now that he can't order it anywhere anymore because it's "never as good as the ones I make!"
(This recipe uses dry infant cereal but you can use all seasoned breadcrumbs if you don't have any cereal to use up!!)
1) Preheat the oven to 400(F) degrees. Mix the first six ingredients together on a plate. Pound the chicken breasts thin between some wax paper or cling wrap. (this helps chicken cook quicker!)
2) Pat the breasts in the seasoning mixture on the plate; coating evenly and transfer to a baking dish or cookie sheet. Bake for 20 minutes. Check for doneness and if necessary, flip and bake 10 min. more.
3) Meanwhile, warm spaghetti sauce in a pot on the stove and also cook and drain noodles according to package directions just before the breasts are done.
4) Place 1/2 the noodles on a plate, top with a scoop of sauce, then a breast, a little more sauce, and finish with a sprinkle of shredded cheese and more parmesan. Enjoy!
