Suggest a better description1. Wash the spinach thoroughly, squeeze dry, then cook in a covered pan over a low heat for 6-8 minutes. Drain well and set aside. 2. Heat the oil and gently cook the onion far 3-4 minutes. Next add the spices and cook for another 4 minutes. Mix in the spinach and heat through. 3. Process the silken tofu in either a food processor or blender until smooth and runny. Pour the this slowly into the spinach mixture, stirring thoroughly. 4. Cook the mixture until hot, stirring well. Do not let it boil. Adjust the seasoning and serve hot. NOTES : This is a light simple main course which is quick to make. As with mast spiced dishes it benefits from reheating. Serve with plain rice or with the Golden Pilau recipe
