Lamb chops marinated in a spiced/lemon yogurt and pan fried.
Peel garlic and finely grate into a bowl.
Add yogurt, squeeze in lemon and season with salt and pepper. Mix together and then transfer a 1/2 cup of the mixture into a small serving bowl to use as a dipping sauce later.
Add spices to remaining yogurt mixture and mix thoroughly.
Place lamb on plate or baking rack and season with salt and pepper. Liberally spread the yogurt mixture on the lamb. Turn and spread more yogurt mixture on the other side. Allow to sit for at least 30 minutes at room temperature or up to 12 hours chilled.
Heat oil in a pan and lightly fry chops for about 3 minutes on each side (up to half of the excess yogurt mixture can be wiped off to prevent excessive burning). This can be done in two or three stages if the chops are too large for the pan.
Serve hot with yogurt mixture on the side. Goes nicely with grilled veggies a crusty sourdough and a side salad.
