Make two loaves
Combine flour, baking powder, baking soda, cinnamon, nutmeg and nuts in a mixing bowl. Make a well in center of mixture. Set aside. In a separate bowl, combine oil, eggs, sugar and vanilla. Mix well. Stir in zucchini. Add mixture to dry ingredients, stirring just until moistened. Spoon mixture into 2 greased and floured 8.5x4.5x3 loaf pans. Bake at 350F for 1 hour. Cool 10 minutes in pans. Remove to wire rack, and cool completely.
