Lasagna-like dish, made Mexican style
1. Coat a 13 x 9 x 2-inch pan with non-stick cooking spray. Heat oven at 375?.2. Combine ricotta, spinach, corn, egg, and 1 cup of the mozzerella.3. Spoon 1/2 cupful on each tortilla; roll up tightly; place seam side down.4. Combine tomatoes, tomato sauce, and basil. Pour over tortillas.5. Sprinkle with parmesean cheese and remaining mozzerella.6. Bake uncovered for 35 minutes.
