Place piece of parchment paper on countertop to give an area where the pecans can cool and dry.
Melt butter in small skillet.
Add pecans and sugar.
Stir until sugar caramelizes, about 3-5 minutes
Spread pecans onto parchment paper to separate. Allow to cool and dry.
Marinate Chicken in oil, salt & pepper.
Grill chicken until internal temperature reaches 165 ° (F) .
Remove from grill and allow to rest. Then cube chicken.
