Squid, chorizo and chickpeas in a quick stew
Heat oil in a large skillet over medium heat.
Add chorizo and cook until beginning to crisp at the edges - 4 to 5 minutes.
Stir in garlic and red pepper (if using) - cook for 1 minute.
Add squid and cook - stirring frequently - 1 minute.
Add chickpeas and cook until squid is cooked thru - about 5 minutes.
Add spinach and stir until wilted.
Serve in a bowl. Top with parsley, almond slices and/or shredded parmesan.
Serve with good sour dough bread.
