- Heat cooking oil over a high heat before adding the chicken, fry for 5 minutes or until beginning to brown
- Transfer the chicken to a bowl
- Add more cooking oil and add the mushrooms, stir fry for 3 minutes
- Add the spring onions, stir fry for 1 minute
- Return the chicken to the pan
- Pour in the stock and reduce by half
- Stir in the teriyaki sauce, heat through and serve
