Time to stir up a fast dinner. In print, it sounds more complicated than it is. Everything on the stove happens fast though so prepare ingredients, plates and utensils in advance.
In medium bowl, toss meat with soy sauce. Cover with plastic wrap and refrigerate 10-60 minutes, stirring once. Drain, discard liquid. Meanwhile, stir together stock and cornstarch in a small measuring cup. Stir in oyster sauce, sherry, brown sugar and sesame oil.
In a small bowl, stir together garlic, ginger and 2 teaspoons of peanut oil. Heat another 2 teaspoons of oil on med-high in wok until shimmery. Every scatter in half of the meat. Cook without stirring for 1 minute. Stir-fry until meat is browned at edges, about 30 seconds. Transfer to medium bowl. Repeat with another 2 teaspoons of peanut oil and remaining meat.
Add 1 tablespoon of oil to skillet. Heat until shimmery. Add broccoli. Stir-fry for 30 seconds. Add water. Cover and lower heat to medium. Cook broccoli until almost tender crisp, 3-5 minutes. Transfer to plate lined with paper towel.
Add remaining 1 teaspoon of peanut oil to wok on med-high heat. Heat until shimmery. Add red pepper. Stir-fry until spotty brown, 1-2 minutes. Push pepper to edges of wok, add garlic mixture to the centre. Stir-fry until fragrant, 10-20 seconds, then add beef and broccoli. Toss to combine.
Give oyster mixture a big stir and then add to the wok. cook stirring until thickened, about 30 seconds.
Pour onto serving platter, Scatter green onions on top.
