Preheat oven to 275.
Dry clean mushrooms. Remove stem. Lightly brush or spray with grapeseed oil. Set aside.
Mix the cream cheese, onion, pepper, olives, salt, pepper flakes, parmesan and seasonings in a bowl. Scoop generous portion into the mushrooms. Top with extra parmesan. Place on a cookie sheet covered with parchment paper. Bake for 25-27 min.
Combine tomato sauce, Italian seasoning, pepper flakes and option ingredient if you with in a small saucepan. bring to a low boil. Reduce heat until ready to serve.
