Start pasta water.
Cook pasta per directions on box.
Brown sausage and beef together; drain fat.
Mix in sauce; heat until boiling. Simmer 20 minutes.
Prepare filling.
mix ricotta, egg, mozzarella, parsley, oregano, parmesan, salt, pepper.
Stuff shells with filling (easiest by pan).
Place stuff shells in 9x13 pan.
Pour sauce over shells. Sprinkle on additional mozzarella and parmesan.
Cover with foil and bake for about 30 minutes at 350 F or until bubbly. If sauce looks too watery, bake a little longer with the foil off.
