Peel and cut sweet potatoes into 1/4 inch french fries, place into zip lock plastic bag. Add corn starch and garlic powder, seal and shake vigorously. Preheat oven to 425 degrees. Add 2 tbsp oil to zip lock bag and shake until all fries are coated. Foil cover large baking pan and spray with pam. Spread fries evenly onto baking pan, into a single layer. Put fries into oven for 10 min, remove and turn fries, put back into oven until nicely browned (another 10min). Remove from oven and salt to taste, serve immediately.
