This is a great healthy version of sweet potato fries. Serve alongside your favorite sandwich. Beware...they are addictive !
Preheat oven to 425 deg F. Cut sweet potatoes lengthwise into wedges; place on baking sheet. Drizzle potatoes with olive oil. Sprinkle with salt and pepper and toss to coat. Bake for 20 minutes or until golden, turning after 10 minutes.
