A delicious pie that keeps well for a long time; in my opinion, it even tops Pumpkin Pie. A cinch to whip up!
Put in a 450 degree oven. To begin, peel the yams or sweet potatoes. Stir in the butter, salt, spices, and sugars until the potatoes are well coated. Incorporating the butter into the heated potatoes is recommended. Orange juice, peel, and evaporated milk are added to the potatoes after the yolks have been beaten till pale. Egg whites should be beaten until they form soft peaks. Fold in a third of the whites to the potatoes to lighten the mixture, then gently fold in the remaining whites so as not to deflate them. Place in unbaked pie crust. If you want, you may sprinkle some pecans on top. After 10 minutes in the oven at 450 degrees Fahrenheit, reduce the heat to 350 degrees and bake for another 30 minutes, or until the filling is slightly puffed, solid in the centre, and the crust is cooked through. Accompany with whipped topping or vanilla ice cream.
