Suggest a better descriptionCut sweet potatoes into large chunks and boil till soft. Drain. Place in food processor and blend until smooth. Add butter, eggs, cinnamon, and all spice to taste. Add milk as needed to thin.
Bake at 350 for 30 minutes.
For Toppings:
If using marshmallows, add marshmallows just before finished baking time and continue cooking until marshmallows are lightly browned and melted.
If using pecan topping add before baking.
If using both, half recipe for pecan topping.
To freeze ahead of time:
Line baking dish with heavy aluminum foil that extends sides. (enough to cover casserole completely) Prepare recipe up to when casserole goes into the oven. Wrap foil over top and place dish in freezer at least 24-48 hours. Remove from freezer and lift out. Rewrap in another layer of foil. Use permanent marker to label casserole, list topping ingredients and amounts, and baking time. Thaw in fridge overnight. ( pecan topping can be frozen with casserole, but not marshmallows)
