Preheat oven to 400 degrees-
- slit potatoes, wrap in tinfoil and place on baking sheet
- bake for just over an hour or until soft
- let the sweet potatoes cool, slice in half, and scoop out insides into a food processor
- blend all ingredients to taste
- keep warm in oven until ready to serve
Option:
microwave slit potatoes with a bit of water for 5-7mins
