A healthy alternative to pancakes
1. Put onion, egg, coriander, flour, baking powder, and black pepper in a blender and blend till smooth.
2. With a wooden spoon, mix in the sweet corn.
3. Heat oil in a frying pan.
4. Form large spoonfuls of mix into patties and fry, cooking for 2 minutes on each side.
5. Garnish with coriander and serve with sweet chilli sauce on the side.
