Different enchiladas
1. Preheat oven to 350 degrees.
2. Heat skillet over med-high heat. Coat with spray. Add onion. Cook for 5 minutes. Then add turkey, garlic, chiles, and tomatoes. Reduce heat and simmer 7 minutes or until liquid evaporates.
3. Combine milk and flour in a small saucepan over med high heat for 5 minutes or until thickens. Stir constantly with whisk. Add salt.
4. Warm tortillas. Spoon approx. 1/2 cup turkey mixture and 2 1/2 tablespoons cheese in each tortilla and roll. Place rolled tortillas in 13x9 inch baking pan coated with cooking spray. Pour milk mixture over tortillas and top with remaining cheese. Bake until cheese is bubbly approx. 25 min.
5. Preheat broiler
6. Broil casserole until cheese begins to brown.
