Great in a pita pocket, refreshing for the summer. Mom's recipe so you know it's good.
Wash 1 cup bulgar (fine) in cold water in strainer. Put in pan and add 1/4 cup cold water, cover and let sit for one hour. Chop the mint, parsley, green onions, and tomatoes. Mix together with bulgar, fresh lemon juice, olive oil, and salt. Let it chill for 3 hours in the fridge. Serve on salad or in pita pockets.
