1. In a large heavy pan melt butter. Add onion and celery and saute until tender.
2. Add remaining ingredients. Simmer covered for 1-1/2 hours. Simmer uncovered for another 1-1/2 hours. Cooking time can take up to 4-6 hours.
3. Adjust seasonings. Can put in a crockpot to keep warm.
