This is a variation on the classic Indian buffet Tandoori chicken, without diary, but just one of the most satisfying dishes you can make it - flavorful, spicy, juicy, and also relatively quick and simple to prepare.
Mix coconut milk, ginger, garlic, garam masala, kashmiri chili, lime juice, salt, turmeric and 2 tablespoon grapeseed ol in a bowl (for presentation, if you like a richer red color, add 4 to 5 drops of red food coloring).
Add chicken legs, coat well, and marinate in a covered bowl or sealed plastic bag at least 4 hours, but ideally overnight.
(NOTE: ideally this is cooked on an outdoor grill, but the below instructions assume oven roasting)
Pre-heat oven to 400 F. Place chicken in a roasting pan, on the rack - then place in oven. Keep excess marinade in a bowl, and have a separate bowl ready with remaining 2 tablespoon grapeseed oil.
Roast 10 minutes. Brush (ideally using a cooking brush) top of chicken legs with oil and marinade.
Roast 10 minutes, brush with oil and marinade again, and then flip.
Roast 10 minutes, and brush with oil and marinade.
Roast 10 minutes, brush a final time with oil and marinade - and now Broil for 2 minutes.
Sprinkle with a bit of finely chopped coriander leaves and serve with a Lime wedge (to be added as desired). Enjoy!
