Chili:
Cook sausage & beef until brown. Drain & set aside. Saute onions, peppers, and garlic in a little olive oil or butter until tender.
Add peppers, celery and spices and saute a couple more minutes. Add tomatoes, meats, and 1/2 cup Cabernet.
Simmer for one hour. Add another 1/2 cup of Cabernet & simmer for another hour. Add beans & simmer for another half hour.
Deep South Version: Substitute ground venison for ground beef.
Heat Gauge:
Mild+ ( A little spicy): No Habanero pepper
Medium ( Good Kick): 1/4 Habanero pepper
Hot (Runny Nose): 1/2 Habanero pepper
Extreme (Prepare to sweat): 3/4 Habanero pepper
Inferno (Indescribable): Entire Habanero pepper
Tips:
1) Flavors improve if cooked for the exact amount of time, stored in the fridge and reheated the next day.
2) Thickness can be adjusted by draining chili beans from can and covering during the last 30 minutes (only) if cooking as follows:
Thickest (can eat with a fork): Drain beans & cook uncovered
Medium Thickness: Drain beans and cook covered
Least thick (eat with a spoon): Don't drain beans and cook covered
I make it mil (It is still spicy if using hot chili beans, you can use 2 hot or 1 hot and 1 mild)
