Preheat oven to 400
Rub olive oil on meat
Put seasoning (rub) on meat.
Standard is to cook 10 min/lb. at 400 (Found it cooks much faster).
Use meat thermometer - Meat should cook to 120 degrees.
Ordered two 7 pound pieces it took 55 min. to cook.
Sit for 10 min. before serving.
