Teriyaki Sauce:
Combine all ingredients in a saucepan over low heat, until sugar is just dissolved. Transfer to empty bottle and set-aside. Will keep in pantry for years.
Slice chicken into large, thick medallions (4 pieces per thigh) and toss in cornflour to coat.
Heat frying pan over high heat, add oil and fry chicken until just browned on all sides, but not yet cooked through.
Add 1/3 cup of sauce and bring to boil.
Turn the chicken through the sauce for a minute or two to coat as sauce thickens.
Arrange chicken on plate and serve with Mayonnaise.
