1. Process coconut milk, 1/4 cup cilantro leaves, sesame oil, fish sauce, curry powder and cayenne pepper in blender until smooth, about 1 min, scraping down sides of blander as needed.
2. Transfer 1/4 cup coconut mixture to medium bowl, add chicken and toss to coat. Cover and refridgerate for 30 min.
3. Add peanut butter, coconut oil, water and 1 tbsp lime juice to remaining coconut mixture in blender and process until smooth, about 1 min. Transfer sauce to bowl and set aside for serving.
4. Toss red cabbage with salt and remaining 1 tbsp lime juice. Cover and refridgerate for 30 min.
5. Adjust oven rack 6 inches from broiler element and heat broiler. Transfer chicken to aluminum foil-lined roasting pan, sprayed with olive oil spray.
6. Broil chicken until evenly charred and registers 175 degrees, 16-20 min. Flip chicken halfway through broiling.
7. Transfer chicken to cutting board and let rest for 5 min.
8. Drain red cabbage. Stir in scallions and remaining 1/4 cup cilantro.
9. Slice chicken and toss with 1/2 cup sauce.
10. Divide chicken evenly among lettuce leaves and top with remaining sauce, cabbage slaw and peanuts.
