Adaptation of "Winter Soup" my Czech mother-in-law makes. It's my favorite soup she makes.
1. Soak beans for 24 hours, changing the water several times (cuts down on gas). Pressure cook beans for 1 hour, set aside.
2. Combine all spices in a dish.
3. Saute onions in olive oil until translucent. Add Bacon and saute until it browns a bit. Add garlic and saute for 60 seconds more.
4. Add turkey , and throw spices on top. Brown turkey, and break it into small pieces that are coated with spice. Add a splash of veggie broth any time you need to loosen fond.
5. Add carrots and saute for 2 minutes.
6. Add veggie broth, beans, rice, and the random veggies, but not the broccoli. Stir everything.
7. Bring to a boil, then cover and reduce to a simmer for 15 to 20 minutes. Add frozen broccoli or regular broccoli, and turn off heat. The heat soup will cook the broccoli enough by itself. Let cool for 30 minutes and enjoy
