Juicy delicious chicken that melts in your mouth.
Rinse chilled chicken in cold water.
Lay baking tray with foil (big sheet enough to wrap a chicken) and layer sea salt on the bottom.
Mix olive oil, pepper and herb. Rub Chicken with the mix evenly.
Arrange in the tray atop salt and wrap with the foil.
Leave in the fridge for 30 mins.
Put in preheated oven at 400 degrees for 1.5 hours.
After 1.5 hours unwrap the chicken (open the foil shell) and let roast for another 30 minutes.
